Lunch Salad in 12 Minutes

Summer isn’t over yet… Savor the last rays of sunshine with this summer-inspired dish, made, of course, with seasonal vegetables that are available right now. This lunch is ready in 12 minutes, so you can use the rest of your lunch break to etch that summery feeling into your memories.
The nectarines add a touch of sweetness to the dish. They pair really well with the slightly bitter, nutty flavor of the artichoke. The parsley and cucumber add a refreshing touch to the whole dish. Tomatoes and salmon are a fantastic combination, and together they give the dish a luxurious touch. Enjoy!
*What does the MSC or ASC label on fish mean?
An MSC label means that the fish was caught responsibly. For example, they calculate how much fish can be caught without jeopardizing the survival of certain species. Fishing methods must minimize damage to the seafloor, and there are many other guidelines that you can read about in detail on their website.
Fish with the ASC label are farmed fish that have undergone strict monitoring. For example, the routine use of antibiotics to prevent disease is prohibited. In addition, there are strict rules regarding the ethical treatment of the fish as well as the people who work at the fish farm. You can find more information here. Farmed fish is often slightly cheaper than wild-caught fish and is therefore sometimes a more affordable option. Be sure to check whether this label is on the packaging—it really makes a difference.

Zoë, what can I do with the leftover ingredients?
- Honey Tomatoes
Use the tomatoes in this salad with feta cheese and strawberries or this quick 6-ingredient lunch salad.
- Artichoke Heart
If you have some artichokes left over, I recommend making this delicious pasta dish. It’s the kind of dish that, once you’ve tried it, you’ll definitely want to make again.
- Nectarines
This nectarine crumble is a delicious breakfast idea that feels super festive but isn't really that much work at all. You can also use it to make this summery vegetable dish.
- Cucumbers
This pasta salad with cottage cheese is definitely worth making if you have leftover cucumber. You can also use this recipe as a super-easy way to use up other leftover vegetables.
- Smoked salmon
You can still use the salmon as a filling for this wrap with pickles and sun-dried tomatoes.
- Parsley
It's a delicious way to top off many dishes, such as this mashed baby potatoes with seasonal vegetables. If you're looking for something new, you can also use it to make this smoothie.
