Salad with arugula, strawberries, and feta cheese

Salad with arugula, strawberries, and feta cheese

When temperatures skyrocket, most people’s natural preference for casseroles and hot soup drops in inverse proportion. That doesn’t mean people are eating fewer vegetables—quite the opposite, in fact; there’s no better time for a summer salad than right now. Feel free to leave the pots and pans in the cupboard, because this salad doesn’t require any spectacular cooking skills. Yet it’s rich in flavor, cheerfully colorful, super tasty, and healthy! Arugula, for example, is high in calcium, iron, and potassium. It also provides a good dose of vitamins A and C. As always, the prep time has been kept to an absolute minimum, leaving you extra time to enjoy the beautiful weather. Win-win!

Ingredients: (serves 2)

  • 2 handfuls of arugula
  • 1 spring onion
  • 5 large strawberries
  • 1 tomato
  • 30 g feta cheese
  • 2 sprigs of fresh mint
  • 2 tbsp sunflower seeds
  • 1 tbsp olive oil
  • salt and pepper

Preparation: (10 minutes of work)

  1. Put the arugula in a bowl.
  2. Slice the green onion into rings and add it to the pan.
  3. Cut the strawberries into pieces and add them.
  4. Dice the tomato and add it to the bowl.
  5. Cut the feta cheese into cubes and add it.
  6. Finely chop the leaves from the sprigs of mint and add them to the mixture.
  7. Add the sunflower seeds.
  8. Add the olive oil.
  9. Season with salt and pepper and mix everything together well.

Enjoy your meal!
