Pasta Salad with Cottage Cheese

Cottage cheese is a cheese with a somewhat grainy texture and a mild flavor. It is a good source of protein, which helps keep you feeling full longer. In addition, cottage cheese contains relatively high amounts of calcium, phosphorus, and selenium. Calcium and phosphorus, among other things, are important for maintaining strong bones. Selenium supports proper thyroid function and is important for the immune system. It may also reduce the risk of cardiovascular disease. This is because selenium is part of an enzyme that prevents LDL cholesterol from oxidizing. As a result, it cannot cause damage to the arteries. Compared to other cheeses, cottage cheese is relatively low in calories. And last but not least, it makes the perfect base for this pasta salad.

Ingredients: (serves 2)

  • 125 g pasta
  • 1 spring onion
  • 1 small cucumber
  • 2 handfuls of strawberries
  • 2 tbsp cottage cheese
  • 1 tbsp olive oil
  • salt and pepper

Preparation: (15 minutes of work)

  1. Cook the pasta according to the package directions.
  2. Meanwhile, slice the scallion into rings and dice the cucumber and strawberries.
  3. Drain the pasta and put it in a bowl.
  4. Add the chopped green onion, cucumber, and strawberries.
  5. Add the cottage cheese and olive oil.
  6. Mix everything together well.
  7. Season with salt and pepper.
