Spring Breakfast from the Oven with Apple and Pistachio

This is a fresh and sweet breakfast that’s perfect to enjoy with the spring sun on your face, while the breeze carries the scent of cherry blossoms from the neighbor’s garden and the chirping of a passing house sparrow subtly breaks the silence. This dish is also delicious when the weather isn’t quite as nice, or when you have time in the morning to wait fifteen minutes for the oven but don’t feel like putting in a lot of effort for breakfast. In all these cases, this breakfast will put a smile on your face. The combination of apple and mint is super tasty, but chocolate and apple are also a fantastic pairing. The mint and chocolate elevate each other to the next level, and the pistachio paste pairs perfectly with all the other ingredients. Add to that a sweet oatmeal crumble, and you’re all set. This breakfast is truly one you have to try. Go ahead and add it to your bucket list. 😉

The Recipe

Ingredients (serves 2):

  • 2 bananas
  • 100 g rolled oats
  • 1 apple
  • 3 tbsp (soy) yogurt
  • 3 tsp pistachio paste
  • 50 g chocolate
  • 4 sprigs of fresh mint

Preparation (5 minutes of prep time + 15 minutes in the oven):

  1. Preheat the oven to 180°C. 
  2. Mash the bananas with a fork in the baking dishes. 
  3. Divide the oatmeal between the two baking dishes and mix well. 
  4. Slice the apple. You can leave the peel on if you want. 
  5. Arrange them in overlapping rows on top of the oatmeal. 
  6. Bake in the oven for 15 minutes. 
  7. In the meantime, finely chop the chocolate and mint. 
  8. When you take the ramekins out of the oven, top them with the yogurt, pistachio paste, chocolate, and fresh mint.

  • Oatmeal
