Apple Pie with Oatmeal

The mercury in the thermometer has already hit some serious lows over the past few days, and especially in the morning, a cold mist hangs over the awakening world. Winter coats and wool sweaters have once again taken the place of summer skirts in my closet, and the Belgian rainy season has officially begun. The weather conditions might be described as slightly depressing, but even then, you can always make the best of it. Even on a rainy, cold morning, for example, an incredibly delicious breakfast can be a real treat. 

A heartwarming meal with a rich flavor profile featuring hints of cinnamon and apple. An oatmeal whose aroma fills your home with a cloud of coziness and whose taste takes you on an autumn walk through the woods, where the red, yellow, and orange leaves create a stunning palette of colors. 

So the main ingredient in this dish is oatmeal, which is very good for ourimmune system.¹ Just as we’re entering the time of year when our immune system is put to the test, that’s definitely a nice benefit. This breakfast is the bright spot in the melody of raindrops tapping against the window.

Ingredients (for 1 person)

  • 50 g rolled oats
  • 250 ml (plant-based) milk
  • 1 tsp honey
  • 1 apple
  • 2 tsp cinnamon

Preparation (15 minutes)

  1. Put the oatmeal and milk in a small saucepan and place it over high heat.
  2. Meanwhile, dice the apple.
  3. Cook in a pan with a little coconut oil. Add the cinnamon and mix well.
  4. Turn down the heat under the oatmeal when it starts to form a porridge.
  5. Let it steep a little longer until it reaches the desired thickness.
  6. Add the honey last.
  7. Put the oatmeal in a small bowl and top it with the sautéed apples.
