This mocktail is vibrant, refreshing, and has a subtle hint of sweetness. It’s a delightful thirst-quencher on warm days and the perfect aperitif when you want to really treat your friends to a summer dinner party. With its rich flavor, this mocktail will keep you captivated until the very last sip—and it’s completely alcohol-free. Enjoy!

*What is elderflower syrup?

Elderflower syrup is made by letting elderflowers steep in water overnight. Sugar and a little lemon are then added. 

Enthusiasts can take on the challenge ofmaking theirown elderflower syrup. Those who prefer a quick and easy option canbuyit at a slightly larger supermarket, a local organic shop, or online. How can I make the flavors more intense?

In my standard recipe, you let the ingredients steep for 3 minutes.Heating them over low heat during this step will give the mocktaila spicierflavor. The tingling, warm sensation of thegingercomes through much more strongly, and you’ll taste the floral note of the elderflower syrup much less. The slightlybitter effectof the grapefruit comes through more prominently. 

This allows you to transform the fresh, slightly sweet, and floral mocktail into a slightly bitter and spicy version. By addingextra elderflower, you canmellowthe flavor out a bit if needed. 

If you wantto preservethefreshnessbut want the warm, spicy flavor of thegingerto come through more strongly, you can let the ingredientssteep forlongerthan 3 minutes. 

The Recipe

Ingredients:(per glass)

  • 17 g ginger, with skin
  • 2 g mint (sprig with 10 leaves)
  • ½ grapefruit
  • 10 g elderflower syrup*

Preparation: (10 minutes)

  1. Grind the ginger and mint. 
  2. Juice the grapefruit
  3. Mix the mint, ginger, grapefruit juice, and elderflower syrup. 
  4. Let it steep for 3 minutes. 
  5. Strain the mocktail and serve it in attractive glasses.

Zoë, what can I do with the leftover ingredients?

  • Ginger

Ginger is sold in all sorts of shapes and sizes. If you have any leftovers after making this dish, you can use them in this tomato pesto. You can use the pesto as described in the recipe on toast as an appetizer or with some pasta and other leftover vegetables to turn it into a full meal. 

Ginger teais great, too! To make it, add a piece measuring 3 cm by 1 cm to boiling water, along with a sprig of mint if you like.

  • Grapefruit

If you have any grapefruit left over, you can use it in this refreshing drink. 

  • Coin

Use the rest of the coin in this apple and pistachio breakfast dish or in this salad with feta cheese. 

  • Elderflower Syrup

The rest of the elderflower syrup will keep in the refrigerator for another 2 weeks. You can also use it to make mocktail with it, using ingredients like beet juice and mint.
