Spinach and Feta Cheese Salad

Spinach is rich in carotenoids, which your body converts into vitamin A. Vitamin A is important for, among other things, a strong immune system, healthy skin, and good vision. Spinach is also rich in vitamin K, which is important for blood clotting. It’s also rich in iron, which plays a role in energy metabolism and the formation of hemoglobin. And finally, it contains a good amount of antioxidants. Cherry tomatoes are best known for their high vitamin C content, which, for example, supports the immune system and aids in iron absorption.
In short, this salad is another great mix of all kinds of healthy ingredients—and it’s also super tasty.
Ingredients: (serves 2)
- 4 handfuls of fresh spinach
- 12 cherry tomatoes
- 1/4 cucumber
- 60 g feta cheese
- 4 sprigs of basil
- 2 sprigs of mint
- 3 tbsp pumpkin seeds
- 3 tbsp olive oil
- salt and pepper


Preparation: (10 minutes)
- Remove the stems from the spinach, cut it into strips, and place it in a bowl.
- Cut the cherry tomatoes in half and add them to the pan.
- Dice the cucumber and add it to the mixture.
- Crumble the feta cheese over it.
- Finely chop the basil and mint leaves and add them to the mixture.
- Add the pumpkin seeds.
- Add the olive oil.
- Season with salt and pepper.
- Arrange the food on the plates.
