The Most Delicious Chocolate Cookies Ever

The Most Delicious Chocolate Cookies Ever

These cookies are the perfected version of a recipe that’s very close to my heart—one I’ve made hundreds of times in my life because they were my grandpa’s favorite cookies. The original recipe dates back to the time in my life before I started my food blog, when I was 15 years old. My grandpa had researched the negative health effects that consuming sugar can have and decided to consistently avoid eating it. At the time, I was studying a major with more math classes than is good for anyone, but in my free time, I was always cooking. I was either recreating entire cooking show recipes in my kitchen or trying out all kinds of my own ideas. I was determined to make cookies for him that were super delicious and that he could enjoy without any worries. That’s how I discovered alternative sweeteners like stevia, which don’t affect blood sugar levels (though, unfortunately, they often behave very differently from regular sugar in baking). On the same shelf at the store were maple syrup, coconut blossom sugar, and agave syrup, so I picked those up too. I went on to make many recipes with these later—you should definitely look them up on the blog. In addition to being “sweet,” each has its own unique flavor profile. This makes them a valuable ingredient that can add depth and flavor to a dish rather than simply serving as a sweetener. That’s also how I discovered almond flour, which consists of very finely ground nuts. All the health benefits associated with eating nuts—such as healthy fats and high protein content—are included in these cookies.

When I was asked to come up with recipes using olive butter, these cookies immediately came to mind. That’s because, on a study trip to Andalusia (link to vlog), I’d taken a tour of a family-run olive oil farm. They let us taste different types of olive oil, taught us how to recognize high-quality olive oil (I wrote a blog post about that), and served us chocolate ice cream drizzled with a little olive oil. That flavor combination surprised me so much that it’s etched in my memory forever.   My grandpa used to say that if math didn’t work out for me, I could always become a chef. So here we are.😉

These super delicious chocolate cookies are made with Ohlive olive butter. I used the pistachio version. Combined with the almond flour, it creates an interesting layered nutty flavor—one that keeps you coming back for more… all the way to the bottom of your cookie jar.😉 I won’t be able to let my grandpa try this version anymore, but I can share the recipe with you. I hope they can brighten up your day a little. Trust me, these cookies are totally worth it (and actually not even that much work🤭)!

Delicious and healthy chocolate cookies made with almond flour

The Recipe

Ingredients: (15 cookies)

  • 200 g almond flour
  • 2 g salt
  • 6 g baking powder
  • 75 g Ohlive Pistachio
  • 12 g vanilla extract
  • 35 g maple syrup
  • 55 g chocolate (70% cocoa)

Preparation: (20 minutes prep time + 8 minutes baking time)

  1. In a large bowl, whisk together the almond flour, salt, and baking powder.
  2. Put the Ohlive, vanilla extract, and maple syrup in a small saucepan. Heat over low heat until the olive butter has melted.
  3. Pour this into the dry ingredients and mix well.
  4. Next, add the chocolate and mix it into the dough with a spatula.
  5. Preheat the oven to 150°C on the convection setting.
  6. Use your hands to form small balls. Place them on a baking sheet lined with parchment paper.
  7. Place the baking sheet in the center of the oven and bake for 8 minutes. You'll know the cookies are done when the edges turn golden brown.

Enjoy your meal!

Zoë, what should I do with the leftover ingredients?

  • Almond Flour

You can also use it to make these super-delicious cookies with chocolate and cornflowers. Or these vanilla-chocolate muffins.

  • Vanilla extract

You can still use the leftovers in lots of baked goods, such as these acai muffins.

  • Maple syrup

You can use this to give anything you want a caramel-like sweet flavor. Like, for example, this strawberry crumble that you can eat for breakfast.

  • Pistachio Ohlive

You can use the leftover butter, for example, for baking or on bread…
