Muffins with an açaí filling
Muffins are traditionally easy and simple to make, and they’re enjoyed by young and old alike. This version with an açaí filling is just as simple to prepare but offers a slightly more refined flavor. The muffins have a subtle vanilla flavor and a soft texture. In the filling, the açaí provides a deep, rich flavor reminiscent of blueberries and chocolate, with hints of citrus, flower petals, and caramel.
These muffins are definitely a special treat for yourself and the people you love.

The Recipe
Ingredients: (12 muffins)
- 170 g spelt flour
- 110 g almond flour
- 140 g coconut blossom sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 155 g butter
- 240 g (soy) milk
- 1 tbsp lemon juice
- 1 egg
- 2 tsp vanilla extract
- 12 Holy Berry acai berries
Preparation: (35 minutes)
- Preheat the oven to 180°C.
- Mix the spelt flour, almond flour, coconut blossom sugar, baking powder, and salt in a bowl.
- Melt the butter in a small saucepan.
- Meanwhile, add the soy milk, vanilla extract, and egg to the bowl.
- Add the melted butter and lemon juice, and mix well.
- Fill the muffin cups with a first layer of the batter.
- On top of each one, place a small scoop of acai berry in the center.
- Then spread the rest of the dough on top.
- Bake the muffins in the oven for 30 to 35 minutes. Toward the end of baking, check to see if they're done by inserting a fork into them. If you can easily pull the fork out without any batter sticking to it, the muffins are done.

In these vanilla and chocolate muffins, you can use up any leftover spelt flour.

- Coconut Blossom Sugar

- Soy Milk
Soy milk is delicious on its own, but it can also be used in oatmeal, for example, as in this one. It’s also super tasty in a smoothie. Give this raspberry smoothie!

So what do you do with the other half of the lemon? Well, definitely don’t throw it away 😉 You can freeze lemon juice in small ice cube trays. Use them to add a refreshing touch to your next homemade drinks or the next time you make these muffins.
These appetizers are a great idea any time of year, and this is another way to use up the leftover lemon.
