Summer Sandwiches with Arugula, Strawberries, and Goat Cheese

It’s 24°C right now. Zara (my overly enthusiastic border collie) is lying on the patio, soaking up the sun. Vico (my other dog) is lying next to me under the umbrella. A gentle breeze is ruffling my hair. With a view of a bright blue sky and a little white butterfly flitting cheerfully by, I’m thinking about what we’re going to have for dinner today.
A sandwich (because it’s so quick and easy to make), topped with strawberries (because they’re so sweet and deliciously refreshing). On top of that goes arugula with its slightly nutty flavor. The goat cheese adds a fresh note to the dish and keeps things interesting. The whole thing is seasoned with fleur de sel because it tastes just a little more refined than regular salt. And pepper, because, well… that’s what you use to season any good dish.
That’s how life should be. That’s how the weather should be, especially in the summer. And we haven’t had too many days like this over the past month. That’s why we need to enjoy it all the more right now—and one way to do that is with a summery dish. This dish will instantly give you summer vibes and put a smile on your face. I hope the weather gods hold off on their rain dance for a little while longer, because I’ve got salsa music in my head and I want to dance in the sun. 🙂

The Recipe
Ingredients: (per roll)
- 1 roll
- 2 strawberries
- 2 slices of goat cheese
- 1 small handful of arugula
- Pepper
- Fleur de sel

Preparation: (10 minutes)
- Cut the roll in half.
- Slice the strawberries.
- Slice the goat cheese.
- Top the rolls with the arugula, strawberries, and goat cheese.
- Season with pepper and fleur de sel.

You can really use it in tons of dishes, like, for example, in this pasta salad with cottage cheese or in a delicious strawberry crumble.
- Arugula
Arugula takes any salad to the next level. For example, you can use it in this salad (which, by the way, also has strawberries). I’ve also used arugula in a super tasty pizza with mackerel.
- Goat Cheese
In these festive appetizers , goat cheese forms the basis of the dish. Super tasty and quick to make. Highly recommended!
