Wrap with Grapes and Chicory

Get ready for a colorful, easy, quick, and delicious dish. This is perfect if you don’t have much time to cook but still want a nutritious meal. The grapes add a touch of sweetness and provide a good amount of potassium. Ingredients: (per wrap)

  • 1 (beet) wrap
  • 2 tbsp skyr
  • 1/2 head of chicory
  • 10 green olives
  • 12 grapes
  • 1/2 tsp peanuts
  • 2 tsp dried basil or 2 sprigs of fresh basil

Preparation: (10 minutes of work)

  1. Spread the skyr over the wrap.
  2. Cut the chicory into rings and sprinkle them on top.
  3. Cut the olives and grapes in half and add them to the wrap.
  4. Sprinkle the peanuts on top.
  5. Garnish with basil.

Tip:

If you find beet wraps at the store, they're a nice alternative to the usual wraps. They not only add more color to your dish, but also extra flavor.

You can also alternate between red and green grapes.

For the olives, it's best to use green ones because they have a more neutral flavor. Black olives would be a bit too overpowering in this dish.
