Apricot and Chocolate Cookies

Today is my 18th birthday, and I thought it would be the perfect opportunity to share another cookie recipe with you. You can always make me happy with delicious cookies. And if they’re packed with healthy ingredients, I get even happier. These cookies have three layers, starting with a crispy base made from almond flour. This provides a good dose of protein, healthy fats, and vitamin E. Vitamin E is important, among other things, for proper muscle recovery after exercise. It also acts as an antioxidant, which, simply put, means it protects our bodies from harmful substances produced, for example, by our metabolism or as a result of UV rays. The recipe is designed so that we don’t need to set the oven higher than 150°C to bake the cookies. This helps preserve as much of the healthy fats found in the almond flour as possible. The second layer consists of dried apricots, which add a delicious, sweet, and fruity flavor to the whole treat. We top it off with a layer of chocolate.


Ingredients: (9 cookies)
- 100 g almond flour
- 70 g coconut flour
- 1 tsp sodium bicarbonate
- ½ tsp salt
- 4 tbsp coconut oil
- 3 tbsp maple syrup
- 18 dried apricots
- 85 g chocolate
Preparation: (30 minutes)
- Preheat the oven to 150°C.
- Put the almond flour, coconut flour, baking soda, and salt in a bowl.
- Melt the coconut oil and add it to the mixture.
- Add the maple syrup and mix everything together well.
- Divide the batter among the muffin cups.
- Put them in the oven for 9 minutes.
- Meanwhile, cut the apricots in half and melt the chocolate in a double boiler.
- Remove the cookies from the oven, top each one with 4 to 5 apricot halves, and drizzle a layer of melted chocolate over them.
- Wait until the chocolate has hardened and the cookies have cooled before removing them from the muffin cups.

Tips:
These cookies taste best with soft apricots. So if you buy a package of dried apricots, it’s best to pick out the softest ones from the package to use in this recipe.
