Crackers with Seasonal Vegetables

A cracker and a few seasonal vegetables—that’s all you need for a delicious lunch. This dish comes together super fast, making it ideal when you don’t have the time or energy to cook an elaborate meal but still want something special on your plate. In this recipe, the vegetables take center stage. Since we’re using seasonal vegetables, they’re at their very best, and the combination of their pure flavors creates a rich and satisfying dish.

Recipe
Ingredients: ( 6 crackers)
- 1 pointed bell pepper
- 6 radishes
- 1 spring onion
- 125 g mozzarella
- (basil) pesto
- 6 crackers
- salt & pepper
Preparation: (10 minutes)
- Peel the pointed bell pepper.
- Cut the pointed bell pepper in half. Then cut each of those two pieces in half again. (So you have a total of four pieces of bell pepper.)
- Cut off the stems and roots of the radishes and slice them into thin rounds.
- Slice the scallion into rings.
- Slice the mozzarella ball.
Version 1:
- Spread the pesto on the cracker.
- Top with 3 slices of mozzarella.
- Place a piece of pointed bell pepper on top.
- Sprinkle some scallions on top.
- Season with salt and pepper.
Version 2:
- Spread the pesto on the cracker.
- Place 3 slices of mozzarella on top.
- Garnish with radishes. (About 2 radishes)
- Sprinkle some scallions on top.
- Season with salt and pepper.
Version 3:
- Spread the pesto on the cracker.
- Place a piece of pointed bell pepper on top.
- Garnish with radishes. (About 2 radishes)
- Sprinkle some scallions on top.
- Season with salt and pepper.
