Valentine's Day – Almond Cookies with Cornflowers

Homemade cookies are such a thoughtful gift to give to the people you care about. It’s a way to show someone you’re thinking of them—a wordless message that says, “I care about you.” Cooking can be a form of art, where you tell a story through your choice of ingredients and the love you put into the dish.  Still, you don’t have to be a master chef to pull off this recipe. Anyone can make these cookies, and I’m sure everyone will enjoy them too!

I created this recipe in collaboration with Smekk.

The Recipe

Ingredients: (makes 8 cookies)

  • 200 g almond flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 tsp cakefactor
  • 4 tbsp coconut oil
  • 50 g chocolate
  • 3 tsp cornflowers

Preparation: (30 minutes)

  1. Preheat the oven to 160°C and line a baking sheet with parchment paper.
  2. Mix the almond flour, salt, baking powder, and cake mix in a bowl.
  3. Melt the coconut oil in a small saucepan over low heat.
  4. Add the melted coconut oil and the maple syrup to the bowl.
  5. Mix well.
  6. Take a tablespoon of the dough, shape it into a ball with your hands, place it on the baking sheet, and gently press it down. Repeat this for all the cookies.
  7. Bake the cookies for 10 minutes.
  8. Then let them cool completely.

Enjoy your meal!
