DIY Roasted Pumpkin Seeds

Fall is the season when many people take advantage of the cozy charm of pumpkins for decorative purposes, but certainly also in the heartwarming casseroles they serve up. In the spirit of not throwing away anything that’s edible—and super delicious—I’m going to show you how to roast pumpkin seeds and turn them into an incredibly flavorful ingredient that makes whatever you add them to that little bit more special. Once you’ve tasted these home-roasted gems, they’ll have won you over! It really doesn’t take much effort, and if you’ve already bought a pumpkin to cook with, it would be a shame to throw away such an incredibly delicious part of it.

The Endless Ways to Use Roasted Pumpkin Seeds
In the morning, to jazz up your fruit yogurt, to add that extra crunch to a salad, or to give your favorite speculaas cookie recipe a different twist, you can’t go wrong by adding pumpkin seeds. They add variety and subtly breathe new life into your weekly menu. In this student mix , they really shine.
What kinds of pumpkin seeds are good for roasting?
You can roast the seeds from any type of squash you use in your dishes. So you can only eat the seeds from edible varieties of squash.


The Recipe
Ingredients:
- 1 edible pumpkin
Supplies:
- Oven
Preparation: (15 minutes of prep time and 30 minutes in the oven)
- Preheat the oven to 180°C and line a baking sheet with parchment paper.
- Cut the pumpkin in half and use a spoon to scoop out the seeds.
- Remove as much of the pumpkin flesh clinging to the seeds as possible. You can also rinse them with water if you like. Then pat them dry thoroughly.
- Spread the pumpkin seeds on the baking sheet and drizzle a little olive oil over them.
- Roast for about 30 minutes until they are golden brown.
- Then let them cool completely and store them in an airtight jar.

Okay, I’ve already convinced you about the pumpkin seeds. Yes! The pumpkin itself can be the base for countless delicious dishes that will have young and old alike dreaming. Below, you’ll find instructions for making roasted pumpkin cubes that you can add to any dish when you’re craving that extra touch of coziness. Toss them into a salad or serve them with cooked quinoa and other roasted seasonal vegetables. The possibilities are endless.
Ingredients:
- the pumpkin from earlier
Supplies:
- Oven
Preparation: (15 minutes of prep time and 20 minutes in the oven)
- Preheat the oven to 200°C and line a baking sheet with parchment paper.
- Peel the pumpkin.
- Cut the pumpkin into cubes of about 2cm².
- Spread them out on the baking sheet.
- Drizzle with olive oil and season generously with salt and pepper.
- Bake in the oven for about 20 minutes, until they're done and you can easily pierce them with a fork.
- Use them right away in a dish. You can also let them cool completely and store them in a container in the fridge to use later this week.
