Peanut, Banana, and Chocolate Muffins

Banana, peanuts, and chocolate! I don’t think I need to say much more to convince you. Because if there’s one thing that’s certain in life, it’s that this combination is always a good idea. Especially when these three ingredients form the basis for a super delicious muffin. Bonus: these muffins are completely plant-based. Let’s get baking!

Ingredients: (makes 8 muffins)

  • 150 g almond flour
  • 50 g coconut flour
  • 1 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.5 tsp salt
  • 2 tbsp coconut oil
  • 1.5 tablespoons peanut butter
  • 2 tbsp maple syrup
  • 1 banana
  • 75 g chocolate

Preparation: (20 minutes prep time + 25 minutes in the oven)

  1. Preheat the oven to 180°C.
  2. Mix together the almond flour, coconut flour, baking powder, cinnamon, and salt.
  3. Melt the coconut oil and peanut butter in a small saucepan, then add them.
  4. Add the maple syrup.
  5. Mash the banana, add it, and then mix everything together well.
  6. Chop the chocolate into pieces and add them.
  7. Mix everything together well.
  8. Take the muffin cups and fill them so that each cup is 3/4 full. 
  9. Put them in the oven for 25 minutes.
  10. Then let them cool completely.
