Homemade granola bars for on the go in 20 minutes

This is a recipe I made a few years ago, right before I left for a city trip to Paris. This week, I came across some of the photos again, and it immediately brought back memories of the chocolatey, nutty flavor of those delicious snacks I’d brought along. That’s just how my brain works. This recipe was simply too good not to share. So that’s why I’m sending it to you today after all, along with a few photos of Paris to round out the experience. 😉
They’re the perfect snack you look forward to all day long. Plus, they keep you full for a long time and give you the energy to keep skipping along happily for the rest of the day. I took them with me to Paris, but I’m sure that even without a view of the Eiffel Tower, this granola bar will put a smile on your face.





The Recipe
Ingredients:
- 10 dates
- Hot water
- 70 g rolled oats
- 30 g shredded coconut
- 3 tbsp cocoa powder
- 3 tbsp cacao nibs
- 2 tablespoons peanut butter
- 40 g chocolate
- 1 tbsp coconut oil
Preparation (20 minutes):
- Start by soaking the dates in warm water. Let them soak for at least 10 minutes; in the meantime, you can continue with the rest of the recipe.
- Put the rolled oats, coconut flakes, cocoa powder, and cocoa nibs in a bowl and mix them together.
- Put three tablespoons of the water from the dates (you can add more if it doesn't blend well), the dates, and the peanut butter in a blender and blend until it forms a thick paste.
- Add them to the bowl with the oatmeal mixture and mix well.
- Shape the mixture into strips and place them on parchment paper.
- Put it in the refrigerator.
- Melt the chocolate and coconut oil in a small saucepan.
- Take the bars out of the refrigerator and roll them in the chocolate one by one.
- Wait until the chocolate has hardened.
