Easter – Chocolate Truffles

When you say "Easter," you think of Easter eggs and other chocolate treats, don't you? The smell of chocolate and that delightful crunch when a chocolate bar is broken evoke nostalgic memories for many food lovers.
When I hear the word “Easter eggs,” I, too, see images flash before my eyes of the morning sun in Grandma’s garden and chocolate Easter bunnies and eggs hidden among the plants. I feel that excitement coursing through my body again as I pick up the chocolate wrapped in colorful paper. And the cold that, after ten minutes, grips your fingers so tightly that you can barely move them. Because, well, the early morning sun on Easter Monday wasn’t exactly known for its warming powers.
However, there’s something I love even more than Easter eggs: chocolate truffles. Yes, we always had those at our house during Easter, too. I actually made the recipe I’m sharing with you here three years ago, but I never dared to post it online because my take on it doesn’t really do justice to the tradition. In terms of ingredients, this recipe differs quite a bit from the traditional version, which is based on melted chocolate and butter and features that classic cocoa coating. Still, I have to admit that I really do love my own unique take on it. So… here’s a tribute to those who think outside the box—and to all chocolate lovers. You really have to give this a try!


The Recipe
Ingredients (for 18 chocolate truffles):
- 200 g almond flour
- 3 tbsp cocoa powder
- 3 tbsp coconut oil
- 120 g mascarpone
- 4 tbsp maple syrup
- 120 g chocolate
- A handful of coconut flakes
Preparation (30 minutes):
- Mix everything except the chocolate and coconut flakes in a bowl until smooth.
- Roll the dough into balls about 1cm² indiameter .
- Next, melt the chocolate in a double boiler (in a bowl suspended over a pot of boiling water).
- Roll the balls in the chocolate and place them on a piece of parchment paper.
- Immediately after that, roll them in the coconut flakes. If you sprinkle the coconut flakes on the chocolate truffles while the chocolate is still soft, they’ll “stick” to them and won’t fall off.
