Something original for Easter brunch—blueberry parfait

Blueberries always give me that summer vacation feeling. They’re my favorite fruit—but only when they’re really ripe. Then they have a fresh, sweet taste that reminds me of the scent of a rose garden after a summer rain shower. It’s a flavor that takes you back in your mind to warm summer days when you go for a long walk with the dog in the evening and get to admire the sunset the whole way. A beautiful spectacle where the sky turns shades of pink, purple, and orange, and every time you look at it, the combination of colors has changed just a little bit. I think it’s gorgeous!

Blueberries are at their best from July through September. The rest of the year, I use frozen blueberries in my dishes. The flavor isn’t quite the same as that of fresh ones, but they do have another big advantage: they give your dish a nice, fresh taste. (Let’s stay positive, okay? 😉). This quality, combined with an optimistic outlook, forms the basis of my blueberry parfait.

But Zoë, what exactly is it?
If the only things you remember from your French classes are the imparfait and the plus-que-parfait, you don’t need to stress about the conjugation of “blueberry parfait.” In this context, “parfait” is a type of ice cream. 

It tastes like a dessert but can also be served for breakfast. This dish gives you that summery feeling, but it’s sure to win everyone over at Easter brunch, too. 

Recipe

Ingredients: (serves 2)

  • 200 g blueberries
  • 2 very ripe bananas
  • 200 ml (soy) milk
  • Optional: honey, to taste

Supplies:

  • Powerful blender

Preparation: (10 minutes)

  1. Put all the ingredients in a powerful blender.
  2. If it doesn't blend well, you can always add some more milk. Giving it a good shake in the blender always helps, too.
  3. If you like it a little sweeter, just add some honey until it tastes sweet enough to you.
