Chocolate Cookies with Coconut

Almond flour is rich in vitamin E, which is good for the immune system. It has a high protein content and is rich in healthy fats: polyunsaturated fatty acids, to be precise. The right amount of these promotes the healing of superficial cuts and burns. It also helps various skin conditions heal more quickly. Like coconut flakes, almond flour is rich in iron, which, among other things, helps reduce fatigue. Coconut flakes are a good source of fiber and give you plenty of energy. Combine all of this with chocolate, and you simply can’t go wrong. 🙂

Ingredients: (12 cookies)

  • 200 g almond flour
  • 1 tsp sodium bicarbonate
  • 1/2 tsp salt
  • 1 tbsp maple syrup
  • 4 tbsp coconut oil
  • 80 g chocolate (at least 70% cocoa)
  • 1 handful of coconut flakes
  • extra: cupcake liners

Preparation:

  1. Preheat the oven to 150°C.
  2. Mix the almond flour with the salt, baking soda, and maple syrup.
  3. Melt the coconut oil and add it to the dough.
  4. Divide the dough among the baking cups and press it down.
  5. Bake in the oven for 10 minutes.
  6. Melt the chocolate and spread it over the cookies.
  7. Garnish with coconut flakes.
