Banana Pancakes with buckwheat

Did you know that buckwheat isn’t actually a grain? It’s a seed! Its name is derived from “beech” and “wheat,” because the seeds look like beech nuts and are a good alternative to wheat. But buckwheat is so much more than that… It’s a valuable source of protein and reduces the risk of cardiovascular disease. It’s high in fiber and magnesium, and it’s also a good source of potassium. Potassium is important for, among other things, maintaining a proper fluid balance and the transmission of nerve impulses in nerve and muscle cells. Buckwheat contains phosphorus, which is essential for energy metabolism and metabolic processes in nerve tissue. It also contains vitamin B1, which is important for energy production in the brain. Vitamins B2 and B6 are also present. Vitamin B6 is essential for the production of red blood cells and for a strong immune system.

Ingredients: (serves 3)

Dough:

  • 2 ripe bananas
  • 8 dates (or more, to taste)
  • 200 g rolled oats
  • 4 tbsp RAW cocoa powder
  • 40 g puffed quinoa
  • 100 g buckwheat
  • 50 g chocolate

Toppings:

  • Greek yogurt
  • kiwi
  • apple
  • blueberries
  • honey

Preparation:

  1. Preheat the oven to 150°C.
  2. Mash the bananas and dates in a bowl.
  3. Cut the chocolate into pieces.
  4. Add the chocolate chips, rolled oats, cocoa powder, puffed quinoa, and buckwheat.
  5. Mix well.
  6. Spread the dough on a baking sheet lined with parchment paper.
  7. Bake in the oven for 15 minutes.
