Cookies with Apple, Walnuts, and Chocolate

Today is Ascension Day, so many people have the day off or a long weekend. That extra free time might just make you feel more like getting in the kitchen. 😉 So today, I’d love to share a new cookie recipe with you.
In my opinion, baking with apples is always a good idea. I love the sweet and fresh touch they add to a dessert. For this recipe, it’s best to use a sweet apple with a firm texture, one that doesn’t lose too much moisture while baking. Cox’s Orange and Elstar, for example, are apple varieties that meet these criteria.
These cookies are just half an hour of baking fun. And they're more than worth it. 🙂 Enjoy!


Ingredients: (makes 8 cookies)
- 100 g coconut flour
- 160 g almond flour
- 1 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
- 2 tbsp cocoa powder
- 4 tbsp coconut oil
- 4 tbsp maple syrup
- 60 ml almond milk
- 100 g chocolate
- 50 g walnuts
- 1 apple
Preparation: (30 minutes)
- Preheat the oven to 160°C.
- Put the coconut flour, almond flour, cinnamon, baking soda, salt, and cocoa powder in a bowl.
- Melt the coconut oil in a small saucepan and add it.
- Add the maple syrup and almond milk.
- Chop the walnuts and chocolate into pieces and add them.
- Mix everything together well.
- Fill each muffin cup with 2 tablespoons of the batter and press it down slightly so that the batter takes the shape of the cups and each muffin forms a cohesive whole.
- Slice the apple and place the slices on the cookies. Press them down gently.
- Bake them in the oven at 160°C for 15 minutes.
- Then let the cookies cool completely.

Tips:
If you can't find sodium bicarbonate at the store, you can also use 2 tsp of baking powder.
