Chocolates with a vanilla filling

Easter is the time when the spring sunshine begins to radiate its blissful warmth, beautiful blossoms appear on the trees everywhere, the daylight stays with us much longer, and there’s no longer any valid excuse for not taking the dogs for a walk. The trees are happy to trade their rugged winter looks for a fresh, spring-green appearance, and the birds are already chirping cheerfully from early in the morning. It’s also the time when the first sweet peas, hyacinths, and forget-me-nots start to peek out, and when the stores are filled with Easter eggs and chocolate. So there are plenty of reasons to dive into my kitchen with springtime enthusiasm and get started on a healthier chocolate treat. Ultimately, that turned into these pralines with a vanilla filling. Perfect for Easter brunch, for an afternoon with a cup of tea in the spring sunshine, or as a nice change from Easter eggs. I hope you enjoy them! 🙂
Ingredients: (for 30 pralines)
- 160 g chocolate (more or less, depending on the size of the chocolate mold)
- 1 can of coconut milk (400 ml)
- 3 dates
- 20 g banana
- 1/4 vanilla bean
Supplies:
- praline molds
- blender


Preparation:
- Put the can of coconut milk in the refrigerator overnight.
- Melt about 120 g of chocolate and divide it among the praline molds.
- Tilt and rotate the mold so that the chocolate spreads along the edges as well.
- Open the can of coconut milk. The coconut cream is at the top of the can and the coconut water is at the bottom. Scoop 3 tablespoons of the coconut cream into a blender.
- Pour 80 ml of the coconut water into the blender.
- Pit the dates and add them.
- Add the banana.
- Take the vanilla bean and cut it in half lengthwise. Scrape out the seeds and add them.
- Blend everything until smooth.
- Meanwhile, the chocolate has hardened. Divide the filling among the molds, leaving a little room at the top for the final layer of chocolate.
- Melt about 40 g of chocolate and divide it among the molds.
- Wait a little while longer until the last layer of chocolate has set.
