Chocolate-filled tartlets

Over the past few days, we’ve already been able to enjoy all the wonderful things spring has in store. The sunshine, pleasant temperatures, and nature is quietly beginning to awaken again. Wonderful! This week’s recipe captures those spring vibes perfectly and is packed with healthy ingredients that are good for our bodies. For example, flaxseed is one of the best sources of the omega-3 fatty acid alpha-linolenic acid. It’s also high in soluble fiber and protein. Hazelnuts are packed with vitamin E, and the cocoa powder provides a nice dose of antioxidants and magnesium. All of this is packed into a super delicious tart. Bring on spring!

Ingredients for 12 tartlets:

Filling:

  • 200 g dates (more or less, depending on your taste)
  • 60 g hazelnuts
  • 2 tbsp peanut butter
  • 1/2 tbsp flaxseed
  • 1.5 tbsp RAW cocoa powder
  • 140 ml almond milk

Dough:

  • 220 g almond flour
  • 60 g coconut flour
  • 1 tbsp baking powder
  • 3 tsp cinnamon
  • a pinch of salt
  • 3 tbsp coconut oil
  • 100 ml almond milk
  • 4 tbsp maple syrup
  • 2 eggs
  • 2 tsp vanilla extract

Supplies:

  • powerful blender
  • 12 muffin cups
  • oven

Preparation:

  1. Start with the chocolate filling:
    • Remove the pits from the dates.
    • Put them in a blender, along with the hazelnuts, peanut butter, flaxseed, cocoa powder, and almond milk.
    • Blend until smooth, adding more almond milk if necessary.
  2. Next, make the dough:
    • Mix the almond flour, coconut flour, baking powder, cinnamon, and a pinch of salt in a bowl.
    • Melt the coconut oil in a small saucepan and add it.
    • Then add the almond milk, maple syrup, eggs, and vanilla extract, and mix well.
  3. Take the muffin cups and spoon a tablespoon of batter into each one. Save some of the batter for the topping. Just a little more than you think you’ll need 🙂
  4. Make a small indentation in the dough to make room for the filling.
  5. Put 1 tablespoon of the filling in each one.
  6. Roll the dough into thin strips and arrange them in a crisscross pattern over the tarts.
  7. Bake them in the oven at 160°C for 15 minutes.
  8. Then wait until they have cooled completely before eating them.
